This sausage tortellini soup is the ultimate comfort food, combining savory sausage, cheese-filled tortellini, and a flavorful broth for a satisfying meal.

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach, chopped
  • 1 package (10 oz) cheese tortellini
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage, breaking it into pieces, and cook until browned.
  • Remove sausage and set aside. In the same pot, sauté onion until soft, then add garlic and cook for 1 minute.
  • Stir in diced tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.
  • Add heavy cream and bring the soup back to a gentle simmer.
  • Stir in tortellini and cook for 5-7 minutes until tender.
  • Add cooked sausage and spinach, cooking just until the spinach wilts.
