1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 cup heavy cream
2 cups spinach, chopped
1 package (10 oz) cheese tortellini
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add sausage, breaking it into pieces, and cook until browned.
Remove sausage and set aside. In the same pot, sauté onion until soft, then add garlic and cook for 1 minute.
Stir in diced tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.
Add heavy cream and bring the soup back to a gentle simmer.
Stir in tortellini and cook for 5-7 minutes until tender.
Add cooked sausage and spinach, cooking just until the spinach wilts.
