This Summer Pasta Primavera is a vibrant and healthy dish filled with fresh, seasonal vegetables. Light, colorful, and delicious, it's the perfect summer meal

Ingredients

  • 8 oz pasta (spaghetti, penne, or your choice)

  • 1 cup cherry tomatoes, halved

  • 1 cup bell peppers, diced

  • 1 cup zucchini, sliced

  • 1 cup yellow squash, sliced

  • 1/2 cup red onion, thinly sliced

  • 2 cloves garlic, minced

  • 1/4 cup olive oil

  • 1/4 cup fresh basil, chopped

  • 1/4 cup grated Parmesan cheese (optional)

  • Salt and pepper to taste

  • 1 tbsp lemon juice

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add garlic and onion, cooking until fragrant.

  3. Add the bell peppers, zucchini, squash, and tomatoes. Sauté for about 5-7 minutes, until vegetables are tender.

  4. Toss in the cooked pasta and mix well. Season with salt, pepper, and lemon juice.

  5. Remove from heat and stir in fresh basil and Parmesan cheese, if using.

  6. Serve immediately and enjoy!

Notes

For extra flavor, try adding a sprinkle of crushed red pepper flakes or a squeeze of fresh lemon juice. You can also add grilled chicken or shrimp for added protein.
