  • 8 oz spaghetti or soba noodles

  • 3 tbsp sesame paste or tahini

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tbsp honey or maple syrup

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • 1/4 cup cold water (to thin sauce)

  • 1 cup shredded carrots

  • 1/2 cucumber, julienned

  • 2 green onions, sliced

  • 1 tbsp toasted sesame seeds

  • Optional: chopped peanuts, fresh cilantro, chili oil for topping

Instructions

  1. Cook noodles according to package instructions. Drain and rinse under cold water.

  2. In a bowl, whisk together sesame paste, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and cold water until smooth.

  3. Toss the cold noodles with the sauce until evenly coated.

  4. Add carrots, cucumber, and green onions. Mix well.

  5. Garnish with sesame seeds, peanuts, cilantro, or chili oil if desired.

  6. Chill before serving or enjoy immediately.

Notes

  • For extra protein, add shredded chicken, tofu, or edamame.

  • You can make this a day in advance—flavors develop even more!

  • Adjust spice with chili flakes or sriracha.
