4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
½ cup cream cheese, softened
½ cup shredded mozzarella cheese
2 cloves garlic, minced
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat oven to 375°F (190°C).
Slice each chicken breast horizontally to create a pocket, without cutting all the way through.
In a bowl, mix spinach, cream cheese, mozzarella, and minced garlic until well combined.
Stuff each chicken breast with the cheese mixture and secure the openings with toothpicks.
Season the outside of the chicken with paprika, salt, and black pepper.
Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Remove toothpicks before serving and enjoy!
Notes
For added flavor, try adding sun-dried tomatoes or bacon to the stuffing.
