  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice each chicken breast horizontally to create a pocket, without cutting all the way through.
  • In a bowl, mix spinach, cream cheese, mozzarella, and minced garlic until well combined.
  • Stuff each chicken breast with the cheese mixture and secure the openings with toothpicks.
  • Season the outside of the chicken with paprika, salt, and black pepper.
  • Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.
  • Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove toothpicks before serving and enjoy!

  • For added flavor, try adding sun-dried tomatoes or bacon to the stuffing.
