  • 4 boneless, skinless chicken breasts

  • 1/2 cup cream cheese (softened)
  • 1/2 cup mozzarella (shredded)
  • 1/4 cup sun-dried tomatoes (optional)
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Toothpicks (for sealing)

Instructions

  • Preheat oven to 375°F (190°C).
  • Butterfly the chicken breasts by cutting them horizontally, but not all the way through. Open each breast like a book.
  • In a bowl, mix the cream cheese, mozzarella, spinach, garlic, and sun-dried tomatoes.
  • Stuff each chicken breast with the filling, and use toothpicks to seal the edges.
  • Season the outside of the chicken with salt, pepper, and olive oil.
  • Heat a skillet over medium heat and sear the chicken breasts for 3 minutes on each side until browned.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the toothpicks before serving.
