  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing them horizontally, ensuring not to cut all the way through.
  3. In a bowl, mix cream cheese, mozzarella, Parmesan, spinach, and garlic.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks.
  5. Season the outside of the chicken with paprika, salt, and pepper.
  6. Heat olive oil in an oven-safe skillet and sear the chicken on both sides until golden.
  7. Transfer skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
  8. Remove from the oven, let rest for 5 minutes, then serve.
