1 lb ground beef
1 can (10.5 oz) cream of mushroom soup
1 cup frozen mixed vegetables
1 ½ cups shredded cheddar cheese
3 cups thinly sliced potatoes
1 small onion, chopped
Salt and pepper to taste
1 tbsp olive oil
Instructions
Preheat the oven to 350°F (175°C).
In a skillet, heat olive oil and sauté the chopped onion until translucent. Add ground beef and cook until browned. Season with salt and pepper.
Layer the bottom of a 9x13-inch casserole dish with cooked beef.
Spread the mixed vegetables evenly over the beef layer.
Pour the cream of mushroom soup over the vegetables.
Top with a layer of shredded cheese.
Arrange the sliced potatoes over the cheese.
Cover with foil and bake for 35-40 minutes. Remove foil and bake for an additional 10 minutes until potatoes are golden and crispy.
Let it rest for 5 minutes before serving.
