This Southern five-layer beef casserole is a comforting dish featuring seasoned ground beef, vegetables, and melted cheese, layered with creamy soup and topped with crispy potatoes. Perfect for family gatherings or an easy weeknight meal.

  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen mixed vegetables
  • 1 ½ cups shredded cheddar cheese
  • 3 cups thinly sliced potatoes
  • 1 small onion, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil and sauté the chopped onion until translucent. Add ground beef and cook until browned. Season with salt and pepper.
  • Layer the bottom of a 9x13-inch casserole dish with cooked beef.
  • Spread the mixed vegetables evenly over the beef layer.
  • Pour the cream of mushroom soup over the vegetables.
  • Top with a layer of shredded cheese.
  • Arrange the sliced potatoes over the cheese.
  • Cover with foil and bake for 35-40 minutes. Remove foil and bake for an additional 10 minutes until potatoes are golden and crispy.
  • Let it rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey for a lighter version.
  • Add a sprinkle of paprika or garlic powder for extra flavor.
