Ingredients

Scale
  • 2 lbs beef chuck, cut into bite-sized pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Prepare Ingredients: Place the beef bites and potatoes into the slow cooker.
  • Mix Sauce: In a small bowl, whisk together melted butter, garlic, beef broth, Worcestershire sauce, onion powder, paprika, thyme, salt, and black pepper.
  • Cook: Pour the sauce over the beef and potatoes, cover, and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  • Thicken Sauce (Optional): Mix cornstarch with 2 tbsp water, stir into the slow cooker, and cook for an additional 15 minutes.
  • Serve: Garnish with fresh parsley and serve warm.

Notes

  • Use baby potatoes for best texture; they hold their shape well.
  • You can substitute beef chuck with stew meat or sirloin.
  • For extra richness, add a splash of heavy cream before serving.
  • Leftovers store well in the refrigerator for up to 3 days.
