1 lb ground beef
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes
3 cups diced potatoes
1 small onion, chopped
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup beef broth
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
Instructions
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add the beef, beans, corn, tomatoes, potatoes, onion, and garlic to the slow cooker.
Pour in beef broth and season with chili powder, smoked paprika, salt, and pepper. Stir well.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
Sprinkle shredded cheddar cheese on top, cover, and let melt for 5 minutes.
Serve warm and enjoy!

Use frozen diced potatoes for convenience.
