  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups diced potatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add the beef, beans, corn, tomatoes, potatoes, onion, and garlic to the slow cooker.
  • Pour in beef broth and season with chili powder, smoked paprika, salt, and pepper. Stir well.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  • Sprinkle shredded cheddar cheese on top, cover, and let melt for 5 minutes.
