1 lb boneless, skinless chicken breasts
3 cups chicken broth
1 cup heavy cream
1 cup milk
1 small onion, diced
3 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 tsp dried thyme
1 tsp dried basil
2 cups fresh spinach, chopped
1 lb potato gnocchi
Salt and pepper, to taste
Instructions
Place chicken, broth, onion, garlic, carrots, celery, thyme, and basil in the slow cooker.
Cover and cook on low for 6-8 hours or high for 3-4 hours.
Shred the chicken with forks directly in the slow cooker.
Add heavy cream, milk, and gnocchi. Cook on high for 30 minutes or until gnocchi is tender.
Stir in spinach, season with salt and pepper, and serve hot.
Notes
For a thicker soup, mix 1 tablespoon of cornstarch with water and stir in during the last 30 minutes.
