Slow cooker chicken gnocchi soup combines tender chicken, soft gnocchi, and fresh veggies in a creamy broth. This easy one-pot recipe is ideal for comforting dinners, packed with flavor and perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 2 cups fresh spinach, chopped
  • 1 lb potato gnocchi
  • Salt and pepper, to taste

Instructions

  • Place chicken, broth, onion, garlic, carrots, celery, thyme, and basil in the slow cooker.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Shred the chicken with forks directly in the slow cooker.
  • Add heavy cream, milk, and gnocchi. Cook on high for 30 minutes or until gnocchi is tender.
  • Stir in spinach, season with salt and pepper, and serve hot.

Notes

  • For a thicker soup, mix 1 tablespoon of cornstarch with water and stir in during the last 30 minutes.
  • Substitute kale for spinach if desired.
