1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1/2 small onion, finely chopped
2 cloves garlic, minced
2 tbsp ketchup
1 tsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
2 cups mashed potatoes (prepared)
Optional: chives or parsley for garnish

Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Divide mixture evenly into a greased muffin tin.
Bake for 20–25 minutes, or until cooked through.
Let cool slightly, then pipe or spoon mashed potatoes on top of each meatloaf muffin.
Garnish with chives or parsley if desired.
Serve warm.
