  • 1/2 cup breadcrumbs

  • 1 egg

  • 1/4 cup milk

  • 1/2 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp ketchup

  • 1 tsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 2 cups mashed potatoes (prepared)

  • Optional: chives or parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.

  • Divide mixture evenly into a greased muffin tin.

  • Bake for 20–25 minutes, or until cooked through.

  • Let cool slightly, then pipe or spoon mashed potatoes on top of each meatloaf muffin.

  • Garnish with chives or parsley if desired.

 

  • Serve warm.

Notes

  • Use a piping bag for prettier mashed potato “frosting.”

  • Can be made ahead and reheated.
