This Sausage and Bean Casserole is a hearty and flavorful dish made with sausages, beans, and a medley of vegetables like onions, garlic, and bell peppers. The rich tomato-based sauce, infused with herbs like thyme and rosemary, creates a comforting meal perfect for any time of year.

Ingredients

  • Sausages: 6-8 pork or beef sausages
  • Beans: 2 cans (14 oz each) cannellini, kidney, or mixed beans
  • Onions: 1 large, finely chopped
  • Garlic: 3 cloves, minced
  • Tomatoes: 1 can (14 oz) chopped or 2 large fresh, diced
  • Tomato Paste: 2 tablespoons
  • Chicken or Vegetable Stock: 2 cups
  • Herbs: 1 teaspoon each of dried thyme and rosemary
  • Bay Leaves: 2 leaves
  • Paprika: 1 teaspoon
  • Olive Oil: 2 tablespoons
  • Salt and Pepper: To taste
  • Worcestershire Sauce: 1 tablespoon
  • Carrots: 2 medium-sized, sliced
  • Celery: 2 sticks, chopped
  • Red Bell Pepper: 1, chopped
  • Optional: Dash of hot sauce, chopped fresh parsley

Instructions

  • Heat olive oil in a large pan over medium heat. Brown the sausages, then remove and set aside.
  • In the same pan, sauté onions, garlic, carrots, celery, and bell pepper until softened.
  • Add the tomato paste and paprika, cooking for another 2 minutes.
  • Stir in the chopped tomatoes, stock, Worcestershire sauce, herbs, and bay leaves.
  • Return the sausages to the pan along with the beans. Bring to a simmer.
  • Cover and cook for 30-40 minutes until the sauce thickens and the flavors meld.
  • Season with salt, pepper, and optional hot sauce. Garnish with parsley before serving.

Notes

  • For a smokier flavor, try adding smoked paprika.
  • This dish pairs well with crusty bread or mashed potatoes.
