  • 1 lb Italian sausage (casings removed)
  • 3 cups fresh spinach (washed and trimmed)
  • 3 garlic cloves (minced)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/4 cup reserved pasta water
  • Salt and pepper to taste

Instructions

  1. Cook the orecchiette pasta according to package instructions. Reserve 1/4 cup pasta water and drain the rest.
  2. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces.
  3. Add minced garlic and cook for 1-2 minutes until fragrant.
  4. Stir in spinach and cook until wilted, about 2-3 minutes.
  5. Add the cooked pasta to the skillet, toss to combine, and stir in reserved pasta water for desired consistency.
  6. Season with salt and pepper to taste, then garnish with grated Parmesan cheese. Serve warm.

Notes

  • For added flavor, sprinkle red pepper flakes or drizzle lemon juice before serving.
  • Substitute kale or arugula for spinach if desired.
