This One Pot Cheesy Chicken Broccoli Rice Casserole is a comforting, creamy dish made in one pot. It's packed with tender chicken, fresh broccoli, and gooey cheese, making it a family favorite meal. Ideal for busy weeknights, this casserole is simple, flavorful, and requires minimal cleanup.

Ingredients

  • Boneless, skinless chicken breasts (cubed)
  • Broccoli florets
  • White rice (uncooked)
  • Chicken broth
  • Milk
  • Cheddar cheese (shredded)
  • Onion (diced)
  • Garlic (minced)
  • Olive oil
  • Salt and pepper

Instructions

  • In a large pot, heat olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and cook until browned.
  • Add the diced onions and garlic, cooking until softened.
  • Stir in the rice and chicken broth, bringing to a boil. Reduce the heat and simmer, covered, for about 15 minutes.
  • Stir in the broccoli and milk, then cook for an additional 5-7 minutes until broccoli is tender and rice is fully cooked.
  • Mix in shredded cheddar cheese until melted and well combined.
  • Remove from heat and serve hot, garnished with extra cheese if desired.

Notes

  • You can substitute brown rice for white rice, but adjust the cooking time accordingly.
  • For a lighter version, use reduced-fat cheddar cheese and skim milk.
