  • 4 boneless, skinless chicken breasts
  • 1 cup shredded Mexican cheese blend
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  • Heat olive oil in a skillet over medium-high heat. Season chicken breasts with chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper.
  • Cook chicken for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, reduce heat to medium and add heavy cream. Let it simmer for 2 minutes.
  • Stir in the shredded Mexican cheese until fully melted and smooth.
  • Return the chicken breasts to the skillet, spooning the cheese sauce over them. Simmer for 2-3 minutes to let flavors combine.
  • Garnish with fresh cilantro and serve hot with your favorite sides.
