  • 2 cups cooked, shredded chicken
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 ½ cups shredded Mexican cheese blend
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • ½ cup diced onions
  • ½ cup chopped cilantro
  • 1 cup corn (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken, diced tomatoes, cream of chicken soup, sour cream, taco seasoning, and onions.
  3. Layer crushed tortilla chips at the bottom of a greased casserole dish.
  4. Spread half the chicken mixture over the chips, followed by a layer of shredded cheese.
  5. Add another layer of crushed tortilla chips and the remaining chicken mixture. Top with cheese.
  6. Bake for 25-30 minutes until bubbly and golden on top.
  7. Garnish with chopped cilantro and serve warm.
