This loaded cauliflower casserole is a delicious low-carb alternative to loaded baked potatoes. Made with cauliflower, cheese, bacon, and sour cream, it's a creamy, cheesy, and satisfying dish perfect for keto diets or comfort food lovers.

  • 1 large head cauliflower, cut into florets
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese, divided
  • 4 slices cooked bacon, crumbled
  • ¼ cup chopped green onions
  • 2 tbsp butter
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Steam or boil cauliflower florets until tender, then drain well.
  3. Mash cauliflower lightly, then mix with sour cream, 1 cup cheddar cheese, butter, garlic powder, onion powder, salt, and pepper.
  4. Transfer mixture to the prepared baking dish. Top with remaining cheese and crumbled bacon.
  5. Bake for 20 minutes or until bubbly and golden.
  6. Garnish with green onions and serve warm.
