Lemon thumbprint cookies feature a buttery, tender dough with a tangy lemon curd center. These zesty cookies are the perfect balance of sweet and tart, making them an irresistible treat for any occasion.

  • 1 cup unsalted butter, softened
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup lemon curd (store-bought or homemade)
  • Zest of 1 lemon

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream the butter and sugar together until light and fluffy. Add vanilla and lemon zest.
  • Gradually mix in flour and salt until combined and a dough forms.
  • Roll dough into 1-inch balls and place on the prepared baking sheet.
  • Press your thumb into the center of each ball to create an indent.
  • Spoon about 1/2 tsp of lemon curd into each indent.
  • Bake for 12-15 minutes until edges are lightly golden. Cool on a wire rack.
