Instructions

  1. Prepare the Crust:
    Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter. Press the mixture into a 9-inch pie pan and bake for 10 minutes. Let cool completely before adding the filling.
  2. Make the Custard Filling:
    In a medium saucepan, whisk together egg yolks, sugar, cornstarch, and salt. Gradually whisk in the milk. Cook over medium heat, whisking constantly until the mixture thickens and begins to boil (about 5-7 minutes). Remove from heat, and stir in butter and vanilla extract. Let the custard cool slightly.
  3. Assemble the Pie:
    Arrange a layer of sliced bananas on the bottom of the cooled pie crust. Pour half of the custard over the bananas, add another layer of banana slices, and pour the remaining custard on top. Smooth the surface with a spatula.
