  • 2 cups cooked, shredded chicken
  • 1 cup diced pineapple (fresh or canned)
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • ¼ cup chopped celery
  • ¼ cup chopped red onion
  • ¼ cup chopped macadamia nuts or almonds
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp lime juice
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  • In a large bowl, combine shredded chicken, pineapple, celery, red onion, and nuts.
  • In a separate bowl, whisk together mayonnaise, Greek yogurt, honey, Dijon mustard, lime juice, salt, and black pepper.
  • Pour the dressing over the chicken mixture and toss until evenly coated.
