Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 large lemons (juice and zest)
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh chopped parsley (for garnish)

Instructions

  • In a large mixing bowl, whisk together lemon juice, lemon zest, minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper.
  • Add the chicken thighs to the marinade, coating well. Cover and refrigerate for at least 1 hour (or up to overnight).
  • Preheat your oven to 375°F (190°C). Place the marinated chicken in a baking dish, skin side up.
  • Bake for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
  • Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

  • For an even richer flavor, marinate the chicken overnight.
  • You can use chicken breasts if preferred, but adjust the cooking time to avoid drying out.
  • Serve with a side of roasted vegetables or a fresh Greek salad for a complete meal.
