2 boneless, skinless chicken breasts, cut into cubes
3 cups baby potatoes, halved
3 tbsp olive oil
4 cloves garlic, minced
½ cup grated parmesan cheese
1 tsp paprika
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional)
2 tbsp unsalted butter
2 tbsp fresh parsley, chopped
Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add the potatoes, season with salt, pepper, and paprika, and cook until golden and tender (about 10-12 minutes). Remove and set aside.
In the same skillet, add another tbsp of olive oil and cook the chicken with Italian seasoning and red pepper flakes until browned and fully cooked (about 6-8 minutes). Remove and set aside.
Reduce heat to low, add butter and garlic to the skillet, and sauté until fragrant (about 1 minute).
Return potatoes and chicken to the skillet, stirring to coat in the garlic butter sauce.
Sprinkle with parmesan cheese and cook for another 2-3 minutes until melted.
Garnish with fresh parsley and serve hot.
Notes
Use Yukon gold or red potatoes for the best texture.
Add extra parmesan for a cheesier flavor.
Adjust spice levels by adding more red pepper flakes.
