  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1 lb potato gnocchi
  • 1 cup spinach (optional)
  • 1 tbsp butter
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden and cooked through. Remove from skillet.
  2. In the same skillet, add butter and minced garlic. Sauté until fragrant.
  3. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  4. Add gnocchi to the skillet, cover, and let it cook for 3-4 minutes until tender.
  5. Stir in parmesan cheese, spinach (if using), and cooked chicken. Simmer until the sauce thickens.
  6. Season with red pepper flakes if desired, then serve hot.
