  • 4 bone-in chicken thighs
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup dry white wine
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Season chicken thighs with salt and pepper, then sear them in the skillet until golden brown on both sides. Remove and set aside.
  • In the same skillet, sauté onions, garlic, carrots, and mushrooms until softened.
  • Deglaze the pan with white wine, scraping any brown bits from the bottom.
  • Stir in chicken broth, Dijon mustard, thyme, and bay leaf. Bring to a simmer.
  • Return chicken to the skillet, cover, and transfer to the oven.
  • Bake for 35-40 minutes, until the chicken is tender and fully cooked.
  • Remove from the oven, stir in heavy cream, and cook on the stovetop for another 5 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred.
  • For a richer sauce, increase the amount of heavy cream or add a splash of extra white wine.
