  • 3 lbs Yukon Gold potatoes, peeled and cubed

  • 4 large eggs, hard-boiled and chopped

  • 1 cup mayonnaise

  • 2 tbsp yellow mustard

  • 1/2 cup sweet pickle relish

  • 1/2 cup chopped celery

  • 1/4 cup chopped red onion

  • Salt and black pepper to taste

  • Paprika for garnish

Instructions

  • Boil potatoes in salted water until tender, about 10-15 minutes. Drain and cool.

  • In a large bowl, combine cooled potatoes, chopped eggs, celery, red onion, and relish.

  • In a separate bowl, mix mayonnaise, mustard, salt, and pepper.

  • Gently fold the dressing into the potato mixture until well coated.

  • Chill for at least 1 hour.

 

  • Garnish with paprika before serving.
