3 lbs Yukon Gold potatoes, peeled and cubed
4 large eggs, hard-boiled and chopped
1 cup mayonnaise
2 tbsp yellow mustard
1/2 cup sweet pickle relish
1/2 cup chopped celery
1/4 cup chopped red onion
Salt and black pepper to taste
Paprika for garnish
Boil potatoes in salted water until tender, about 10-15 minutes. Drain and cool.
In a large bowl, combine cooled potatoes, chopped eggs, celery, red onion, and relish.
In a separate bowl, mix mayonnaise, mustard, salt, and pepper.
