1 lb boneless, skinless chicken breasts
1 can (15 oz) white beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (4 oz) diced green chilies
1 small onion, diced
3 cups chicken broth
1 tsp cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
4 oz cream cheese
Salt and pepper to taste
Fresh cilantro, for garnish
Instructions
Place chicken breasts, white beans, corn, green chilies, onion, chicken broth, and spices in the crockpot.
Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
Remove the chicken, shred it using two forks, and return it to the crockpot.
