Ingredients

  • 1 lb boneless chicken breast (or protein of choice)
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian seasoning

Instructions

  1. Place the chicken (or protein) at the bottom of the crockpot.
  2. Add the diced potatoes, carrots, onions, and garlic on top.
  3. Pour in the diced tomatoes and chicken broth.
  4. Sprinkle salt, pepper, and Italian seasoning over everything.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken (if using) and mix before serving.

Notes

  • You can swap chicken for beef, pork, or tofu.
