  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3-4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup sun-dried tomatoes, chopped
  • Fresh basil, chopped, for garnish

Instructions

  1. Season chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat. Sear the chicken until golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in heavy cream and chicken broth, scraping up any brown bits from the bottom of the skillet. Simmer for 3-4 minutes.
  5. Stir in grated Parmesan cheese, dried thyme, oregano, and crushed red pepper flakes. Continue to cook until the sauce thickens slightly.
  6. Add the sun-dried tomatoes and return the chicken to the skillet. Spoon the sauce over the chicken and simmer for 2-3 more minutes.
  7. Garnish with fresh basil before serving.
