This easy chicken enchiladas recipe is a delicious and simple dinner idea. Packed with shredded chicken, gooey cheese, and a rich enchilada sauce, it’s a comforting meal for any night of the week!

  • 2 cups shredded cooked chicken
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup chopped onion (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix the shredded chicken, 1 cup of cheese, onion, garlic powder, and cumin.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro and serve hot.

  • Use rotisserie chicken for a quicker option.
  • Add jalapeños or green chiles for extra spice.
