Ingredients

Scale
  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil and butter in a skillet over medium heat. Sear beef strips for 2-3 minutes per side until browned. Remove and set aside.
  • In the same skillet, sauté onions and mushrooms until softened, about 5 minutes. Add garlic and cook for 1 minute.
  • Stir in the flour, cook for 1 minute, then gradually add beef broth and Worcestershire sauce. Stir until the sauce thickens.
  • Lower the heat, mix in sour cream, and season with salt and pepper.
  • Return the beef to the skillet, mix well, and simmer for 2-3 minutes.
  • Serve hot over egg noodles, rice, or mashed potatoes, garnished with parsley.

Notes

  • For extra flavor, use a touch of paprika or Dijon mustard in the sauce.
  • Avoid overcooking the beef to keep it tender.
  • You can substitute Greek yogurt for sour cream for a healthier version.
