2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp chipotle powder
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
Salt and pepper to taste
4 large flour tortillas
½ cup shredded cheddar cheese
½ cup shredded lettuce
¼ cup diced tomatoes
¼ cup black beans (optional)
¼ cup corn kernels (optional)
¼ cup sour cream
¼ cup ranch dressing
1 tbsp chipotle sauce
1 tbsp lime juice
Instructions
Preheat grill to medium-high heat.
In a bowl, mix olive oil, chipotle powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat chicken evenly.
Grill chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
In a small bowl, mix ranch dressing, chipotle sauce, and lime juice.
Warm tortillas on a skillet, then layer with cheese, grilled chicken, lettuce, tomatoes, black beans, and corn. Drizzle with chipotle ranch sauce.
Fold in the sides and roll tightly into a burrito.
Grill or toast the burrito for 1-2 minutes on each side for a crispy finish.
