  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chipotle powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • ½ cup shredded cheddar cheese
  • ½ cup shredded lettuce
  • ¼ cup diced tomatoes
  • ¼ cup black beans (optional)
  • ¼ cup corn kernels (optional)
  • ¼ cup sour cream
  • ¼ cup ranch dressing
  • 1 tbsp chipotle sauce
  • 1 tbsp lime juice

Instructions

  • Preheat grill to medium-high heat.
  • In a bowl, mix olive oil, chipotle powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat chicken evenly.
  • Grill chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
  • In a small bowl, mix ranch dressing, chipotle sauce, and lime juice.
  • Warm tortillas on a skillet, then layer with cheese, grilled chicken, lettuce, tomatoes, black beans, and corn. Drizzle with chipotle ranch sauce.
  • Fold in the sides and roll tightly into a burrito.
