Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • Salt and pepper, to taste

Instructions

  • In a skillet, brown the Italian sausage over medium heat until cooked through. Drain any excess grease.
  • Add the cooked sausage to a crockpot, followed by onion, garlic, chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes. Stir well.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Thirty minutes before serving, add tortellini, heavy cream, and spinach. Stir to combine and cook until tortellini is tender.
  • Season with salt and pepper to taste. Serve warm.

Notes

  • For a lighter option, substitute heavy cream with half-and-half.
  • Add extra veggies like carrots or zucchini for more flavor.
  • Use spicy sausage for a kick or mild sausage for a milder flavor.
