Ingredients
Scale
2 boneless, skinless chicken breasts
1 cup uncooked long-grain white rice
2 cups chicken broth
1 can (10.5 oz) condensed cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
2 cups broccoli florets (fresh or frozen)
1 ½ cups shredded cheddar cheese
½ cup milk
Instructions
Place the chicken breasts in the crockpot.
Add rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir to combine.
Cover and cook on LOW for 4-5 hours or until chicken is tender.
Remove the chicken, shred it with forks, and return it to the crockpot.
Stir in the broccoli and milk, then cook for an additional 30 minutes.
Add cheddar cheese and stir until melted.
Serve warm and enjoy!
Notes
Use brown rice for a healthier option, but adjust cooking time accordingly.
For extra creaminess, add a splash of heavy cream.
Swap cheddar for mozzarella or pepper jack for a different flavor.
