This Crock Pot Creamy Cajun Chicken Pasta is a flavorful and easy slow cooker recipe. Tender chicken, bold Cajun spices, and a rich, creamy sauce come together perfectly with pasta for a delicious meal.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 4 ounces cream cheese, cubed
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 8 ounces penne pasta
  • 1 tablespoon butter
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  • Season chicken breasts with Cajun seasoning and place them in the crock pot.
  • Add heavy cream, chicken broth, cream cheese, Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt.
  • Cover and cook on low for 4-5 hours or until chicken is tender.
  • Remove the chicken, shred or slice, and return it to the crock pot.
  • Cook pasta according to package instructions. Drain and stir it into the crock pot.
  • In a skillet, melt butter and sauté bell pepper and cherry tomatoes until soft. Add to the crock pot.
  • Stir everything together and cook for an additional 15 minutes.
  • Garnish with fresh parsley and red pepper flakes (if using). Serve warm.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Use any pasta shape you prefer.
  • Add cooked andouille sausage for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
