2 boneless, skinless chicken breasts
1 tablespoon Cajun seasoning
2 cups heavy cream
1 cup chicken broth
4 ounces cream cheese, cubed
1 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
8 ounces penne pasta
1 tablespoon butter
1 bell pepper, sliced
1 cup cherry tomatoes, halved
¼ teaspoon red pepper flakes (optional)
Fresh parsley for garnish
Instructions
Season chicken breasts with Cajun seasoning and place them in the crock pot.
Add heavy cream, chicken broth, cream cheese, Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt.
Cover and cook on low for 4-5 hours or until chicken is tender.
Remove the chicken, shred or slice, and return it to the crock pot.
Cook pasta according to package instructions. Drain and stir it into the crock pot.
In a skillet, melt butter and sauté bell pepper and cherry tomatoes until soft. Add to the crock pot.
Stir everything together and cook for an additional 15 minutes.
Garnish with fresh parsley and red pepper flakes (if using). Serve warm.
Notes
Adjust Cajun seasoning to taste for more or less spice.
Use any pasta shape you prefer.
Add cooked andouille sausage for extra flavor.
Store leftovers in an airtight container for up to 3 days.
