  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 egg
  • ½ cup all-purpose flour
  • 2 tbsp olive oil
  • 8 oz pasta (fettuccine or penne)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Pound the chicken breasts to an even thickness. Season with salt and pepper.
  2. Bread the Chicken: Dredge each chicken breast in flour, dip in beaten egg, then coat with a mixture of breadcrumbs and Parmesan cheese.
  3. Cook the Chicken: Heat olive oil in a pan over medium heat. Cook chicken for 4-5 minutes per side until golden and crispy. Set aside.
  4. Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
  5. Make the Sauce: In the same pan, melt butter, sauté garlic until fragrant, then add heavy cream, chicken broth, Parmesan, Italian seasoning, salt, and pepper. Simmer until thickened.
  6. Combine: Toss the pasta in the creamy sauce. Slice the crispy chicken and serve over the pasta. Garnish with fresh parsley.

Notes

  • Use panko breadcrumbs for extra crispiness.
  • Add red pepper flakes for a spicy kick.
