This Creamy Potato & Hamburger Soup recipe combines tender potatoes, seasoned ground beef, and a creamy broth for a hearty, flavorful dish. Quick and easy to make, this soup is perfect for family dinners or meal prep.

  • 1 lb ground beef
  • 4 cups potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: chopped parsley or green onions for garnish

Instructions

  • In a large pot, brown the ground beef over medium heat. Remove and set aside.
  • In the same pot, melt butter and sauté onions and garlic until soft and fragrant.
  • Stir in flour and cook for 1 minute to form a roux.
  • Slowly add the broth, stirring constantly, and bring to a boil.
  • Add diced potatoes, paprika, salt, and pepper. Reduce heat and simmer until potatoes are tender (about 15 minutes).
  • Return the cooked ground beef to the pot.
  • Stir in heavy cream and shredded cheddar cheese until melted and combined.
  • Serve warm, garnished with parsley or green onions if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding the ground beef.
  • You can substitute ground turkey or chicken for a lighter option.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
