1 lb ground beef
4 cups potatoes, peeled and diced
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken or beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
2 tbsp all-purpose flour
2 tbsp butter
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
Optional: chopped parsley or green onions for garnish
Instructions
In a large pot, brown the ground beef over medium heat. Remove and set aside.
In the same pot, melt butter and sauté onions and garlic until soft and fragrant.
Stir in flour and cook for 1 minute to form a roux.
Slowly add the broth, stirring constantly, and bring to a boil.
Add diced potatoes, paprika, salt, and pepper. Reduce heat and simmer until potatoes are tender (about 15 minutes).
Return the cooked ground beef to the pot.
Stir in heavy cream and shredded cheddar cheese until melted and combined.
Serve warm, garnished with parsley or green onions if desired.
Notes
For a thicker soup, mash some of the potatoes before adding the ground beef.
You can substitute ground turkey or chicken for a lighter option.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
