Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 3 medium potatoes, diced
  • 2 carrots, sliced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add Italian sausage and cook until browned, breaking it apart as it cooks.
  • Add diced onions, garlic, carrots, and potatoes. Sauté for 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for 15-20 minutes, until the vegetables are tender.
  • Stir in heavy cream, Parmesan cheese, spinach, and Italian seasoning.
  • Cook for another 5 minutes, stirring occasionally, until the spinach wilts and the soup thickens.
  • Season with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

  • For a lower-carb version, substitute potatoes with cauliflower.
  • You can use hot Italian sausage for a spicier kick.
  • If the soup is too thick, add more chicken broth to adjust consistency.
