Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms (sliced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 garlic cloves (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  • In the same skillet, melt butter and add minced garlic. Cook for 1 minute until fragrant.
  • Add sliced mushrooms and cook until tender, about 5-7 minutes.
  • Pour in chicken broth and heavy cream, stirring to combine. Simmer until the sauce thickens, about 5 minutes.
  • Add thyme, then return the chicken to the skillet. Simmer for an additional 5 minutes to heat through.
  • Serve hot, garnished with extra thyme if desired.

Notes

  • Use chicken thighs for a juicier option.
  • Substitute half-and-half for a lighter sauce.
  • Serve with mashed potatoes or rice to soak up the creamy sauce.
