8 oz pasta (fettuccine or spaghetti)
1 lb shrimp (peeled and deveined)
3 tbsp olive oil
3 cloves garlic (minced)
1 cup heavy cream
1/2 cup chicken broth
1/3 cup sun-dried tomatoes (chopped)
1/2 tsp red pepper flakes
1/2 cup grated Parmesan cheese
Fresh basil (chopped, for garnish)
Salt and pepper to taste
Instructions
Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain.
In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink. Remove and set aside.
In the same skillet, sauté garlic until fragrant. Add chicken broth, heavy cream, sun-dried tomatoes, and red pepper flakes. Simmer for 3-4 minutes.
Stir in Parmesan cheese until the sauce thickens. Add cooked pasta and shrimp, tossing to coat. Use reserved pasta water if needed to adjust consistency.
Serve hot, garnished with fresh basil and extra Parmesan if desired.
Notes
You can substitute chicken or scallops for shrimp.
Add extra red pepper flakes for a spicier kick.
For a lighter option, use half-and-half instead of heavy cream.
