  • 8 oz pasta (fettuccine or spaghetti)
  • 1 lb shrimp (peeled and deveined)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup sun-dried tomatoes (chopped)
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Fresh basil (chopped, for garnish)
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain.
  • In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink. Remove and set aside.
  • In the same skillet, sauté garlic until fragrant. Add chicken broth, heavy cream, sun-dried tomatoes, and red pepper flakes. Simmer for 3-4 minutes.
  • Stir in Parmesan cheese until the sauce thickens. Add cooked pasta and shrimp, tossing to coat. Use reserved pasta water if needed to adjust consistency.
  • Serve hot, garnished with fresh basil and extra Parmesan if desired.
