  • 12 oz pasta (penne, fettuccine, or your choice)
  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup basil pesto (store-bought or homemade)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional garnish: fresh basil leaves and extra Parmesan

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Stir in the basil pesto and heavy cream, mixing until combined.
  • Add the cooked chicken to the skillet and toss to coat in the sauce.
  • Stir in Parmesan cheese and reserved pasta water (if needed) to achieve desired sauce consistency.
  • Add the cooked pasta to the skillet and toss until fully coated in the creamy pesto sauce.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh basil and extra Parmesan if desired.
