  • 4 slices of Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts to an even thickness and season with salt and pepper.
  • Place a slice of ham and cheese on each chicken breast, then roll tightly and secure with toothpicks.
  • Coat each chicken roll in flour, dip in beaten eggs, then roll in breadcrumbs.
  • Heat olive oil and butter in a skillet over medium heat, then brown the chicken rolls on all sides.
  • Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  • In the same skillet, combine chicken broth, heavy cream, Dijon mustard, and garlic powder. Simmer until slightly thickened.
  • Pour the sauce over the baked chicken rolls and serve hot.

Notes

  • For a lighter option, you can use low-fat cheese and substitute cream with milk.
  • Pair with steamed vegetables or mashed potatoes for a complete meal.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
