1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups heavy cream
1 cup grated Parmesan cheese
1 ½ cups shredded mozzarella cheese
8 lasagna noodles, broken into pieces
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
1 tbsp butter
1 tbsp olive oil
Fresh parsley for garnish
Instructions
In a large pot, heat olive oil and butter over medium heat. Add diced onions and garlic, sauté until fragrant.
Add ground chicken or turkey and cook until browned. Drain excess fat if needed.
Pour in chicken broth and bring to a simmer. Add broken lasagna noodles and cook until tender.
Reduce heat and stir in heavy cream, Parmesan cheese, mozzarella, Italian seasoning, salt, and black pepper. Stir until cheese melts.
Let simmer for a few more minutes until soup thickens. Adjust seasoning as needed.
Serve hot, garnished with fresh parsley and additional cheese if desired.
