This Creamy Alfredo Lasagna Soup is a comforting, cheesy delight featuring tender lasagna noodles, a rich Alfredo broth, and savory seasonings. Perfect for a cozy night in!

 

Ingredients

  • 1 lb ground chicken or turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 ½ cups shredded mozzarella cheese
  • 8 lasagna noodles, broken into pieces
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • In a large pot, heat olive oil and butter over medium heat. Add diced onions and garlic, sauté until fragrant.
  • Add ground chicken or turkey and cook until browned. Drain excess fat if needed.
  • Pour in chicken broth and bring to a simmer. Add broken lasagna noodles and cook until tender.
  • Reduce heat and stir in heavy cream, Parmesan cheese, mozzarella, Italian seasoning, salt, and black pepper. Stir until cheese melts.
  • Let simmer for a few more minutes until soup thickens. Adjust seasoning as needed.
  • Serve hot, garnished with fresh parsley and additional cheese if desired.
