  • 1/2 cup onion, finely chopped

  • 1 1/2 cups crushed Ritz crackers
  • 3/4 cup whole milk
  • 2 eggs, lightly beaten
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine ground beef, onion, bell pepper, crushed Ritz crackers, milk, eggs, salt, and pepper. Mix thoroughly.
  3. Place the mixture into the prepared loaf pan, pressing down evenly.
  4. In a small bowl, mix ketchup, brown sugar, and mustard to make the glaze. Spread half the glaze evenly over the meatloaf.
  5. Bake for 1 hour. After 30 minutes, add the remaining glaze on top and continue baking.
  6. Remove from oven and let the meatloaf rest for 10 minutes before slicing.
