Ingredients

1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
¼ tsp black pepper
¼ tsp smoked paprika (optional)
2 large eggs
½ cup milk
1 tbsp melted butter
1 ½ cups corn kernels (fresh, canned, or frozen)
2 green onions, chopped
Oil for frying
Instructions
In a large bowl, mix flour, baking powder, salt, pepper, and smoked paprika.
In another bowl, whisk eggs, milk, and melted butter until smooth.
Pour the wet mixture into the dry ingredients and mix until just combined.
Fold in the corn kernels and chopped green onions.
Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil.
Fry for 2-3 minutes per side or until golden brown. Drain on paper towels and serve hot.
Notes
Add a pinch of cayenne for a spicy kick.
Serve with sour cream or a spicy dipping sauce for extra flavor.
To keep fritters warm, place on a baking sheet in an oven at low heat.
