Golden, crispy corn fritters make a delicious snack or side dish, loaded with sweet corn, seasoned batter, and a hint of spice. Perfect for breakfast or brunch!

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp smoked paprika (optional)
  • 2 large eggs
  • ½ cup milk
  • 1 tbsp melted butter
  • 1 ½ cups corn kernels (fresh, canned, or frozen)
  • 2 green onions, chopped
  • Oil for frying

Instructions

  • In a large bowl, mix flour, baking powder, salt, pepper, and smoked paprika.
  • In another bowl, whisk eggs, milk, and melted butter until smooth.
  • Pour the wet mixture into the dry ingredients and mix until just combined.
  • Fold in the corn kernels and chopped green onions.
  • Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil.
  • Fry for 2-3 minutes per side or until golden brown. Drain on paper towels and serve hot.

Notes

  • Add a pinch of cayenne for a spicy kick.
  • Serve with sour cream or a spicy dipping sauce for extra flavor.
  • To keep fritters warm, place on a baking sheet in an oven at low heat.
