Chinese Peanut Butter Chicken is a delicious dish that combines tender chicken with a creamy, flavorful peanut butter sauce. It's quick, easy to prepare, and a perfect option for weeknight dinners or family gatherings.

  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 3 tbsp peanut butter (smooth or crunchy)
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tbsp honey or brown sugar
  • 1/4 cup chicken broth or water
  • 1 tbsp cornstarch (optional, for thickening)
  • Green onions and sesame seeds for garnish

Instructions

  • In a bowl, marinate the chicken with 1 tbsp soy sauce for 10 minutes.
  • Heat sesame oil in a pan or wok over medium heat. Add the chicken and cook until browned on all sides. Remove and set aside.
  • In the same pan, sauté garlic and ginger until fragrant.
  • In a small bowl, whisk together peanut butter, hoisin sauce, rice vinegar, remaining soy sauce, honey, and chicken broth. Pour the sauce into the pan.
  • Add the chicken back into the pan and stir well to coat. Simmer for 5-7 minutes. If the sauce is too thin, mix cornstarch with a tablespoon of water and stir it into the pan to thicken.
  • Garnish with green onions and sesame seeds. Serve hot over rice or noodles.

Notes

  • For a spicier kick, add 1 tsp of chili garlic sauce or a pinch of red pepper flakes to the sauce.
  • Substitute almond butter if you have peanut allergies.
  • This dish pairs well with steamed broccoli or bok choy for added vegetables.
