1 lb (450g) chicken breast, cut into bite-sized pieces
2 tbsp soy sauce
3 tbsp peanut butter (smooth or crunchy)
1 tbsp hoisin sauce
1 tbsp rice vinegar
1 tbsp sesame oil
2 garlic cloves, minced
1 tsp grated ginger
1 tbsp honey or brown sugar
1/4 cup chicken broth or water
1 tbsp cornstarch (optional, for thickening)
Green onions and sesame seeds for garnish
Instructions
In a bowl, marinate the chicken with 1 tbsp soy sauce for 10 minutes.
Heat sesame oil in a pan or wok over medium heat. Add the chicken and cook until browned on all sides. Remove and set aside.
In the same pan, sauté garlic and ginger until fragrant.
In a small bowl, whisk together peanut butter, hoisin sauce, rice vinegar, remaining soy sauce, honey, and chicken broth. Pour the sauce into the pan.
Add the chicken back into the pan and stir well to coat. Simmer for 5-7 minutes. If the sauce is too thin, mix cornstarch with a tablespoon of water and stir it into the pan to thicken.
Garnish with green onions and sesame seeds. Serve hot over rice or noodles.
Notes
For a spicier kick, add 1 tsp of chili garlic sauce or a pinch of red pepper flakes to the sauce.
Substitute almond butter if you have peanut allergies.
This dish pairs well with steamed broccoli or bok choy for added vegetables.
