  • 6 bone-in, skin-on chicken thighs
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper, then sear them skin-side down until golden brown, about 7-8 minutes. Flip and cook the other side for another 5 minutes. Remove and set aside.
  • In the same skillet, melt the butter. Add mushrooms and cook until soft and browned, about 5 minutes. Add garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and bring to a simmer.
  • Return the chicken thighs to the skillet, spooning some sauce over the top. Reduce heat to low, cover, and simmer for 20-25 minutes until the chicken is cooked through.
  • Garnish with fresh parsley and serve.

  • For a thicker sauce, let it simmer uncovered for a few extra minutes.
