2 slices of bread (sourdough or your choice)
1 cooked chicken breast (grilled or shredded)
1 ripe avocado, sliced
2 slices of cheddar or provolone cheese
1 tablespoon mayonnaise or butter (optional, for spreading)
Lettuce and tomato slices (optional)
Salt and pepper to taste
Instructions
Preheat a skillet or grill pan over medium heat.
Spread butter or mayonnaise on one side of each bread slice (optional).
On the unspread side of one bread slice, layer chicken, avocado slices, and cheese. Add lettuce and tomato if desired.
Top with the second bread slice, buttered side out.
Place the sandwich in the skillet and cook for 3-4 minutes on each side until the bread is golden and the cheese is melted.
Remove from heat, slice in half, and serve warm.
