Ingredients

  • 2 slices of bread (sourdough or your choice)
  • 1 cooked chicken breast (grilled or shredded)
  • 1 ripe avocado, sliced
  • 2 slices of cheddar or provolone cheese
  • 1 tablespoon mayonnaise or butter (optional, for spreading)
  • Lettuce and tomato slices (optional)
  • Salt and pepper to taste

Instructions

  • Preheat a skillet or grill pan over medium heat.
  • Spread butter or mayonnaise on one side of each bread slice (optional).
  • On the unspread side of one bread slice, layer chicken, avocado slices, and cheese. Add lettuce and tomato if desired.
  • Top with the second bread slice, buttered side out.
  • Place the sandwich in the skillet and cook for 3-4 minutes on each side until the bread is golden and the cheese is melted.
  • Remove from heat, slice in half, and serve warm.
