2 cups mashed potatoes
1 cup shredded cheddar cheese
2 eggs
¼ cup milk
¼ cup sour cream
¼ cup chopped chives
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ cup panko breadcrumbs (optional, for extra crunch)
Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin.
In a bowl, mix mashed potatoes, cheese, eggs, milk, sour cream, chives, salt, pepper, and garlic powder until well combined.
Spoon mixture into the muffin tin, filling each cup about ¾ full.
(Optional) Sprinkle panko breadcrumbs on top for extra crunch.
Bake for 20-25 minutes or until golden brown and crispy on the edges.
Let cool slightly before serving. Enjoy!

Use leftover mashed potatoes for convenience.
