Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice chicken breasts horizontally to create a pocket without cutting through.
  • In a skillet, melt butter over medium heat. Add garlic and mushrooms, sauté until tender. Season with salt, pepper, and Italian seasoning.
  • Stuff each chicken breast with the garlic butter mushrooms and mozzarella cheese. Secure with toothpicks if needed.
  • Heat olive oil in a skillet over medium-high heat. Sear stuffed chicken breasts for 2-3 minutes per side until golden.
  • Transfer skillet to the oven and bake for 20-25 minutes or until chicken is fully cooked (internal temperature of 165°F).
  • Remove from oven, let rest for 5 minutes, and serve hot.

Notes

  • Use a meat thermometer to ensure the chicken is perfectly cooked.
  • Substitute mozzarella with provolone or gouda for a different flavor.
  • Serve with steamed veggies, a side salad, or mashed cauliflower for a low-carb meal.
