  • 1 zucchini, chopped

  • 1 can (14.5 oz) diced tomatoes

  • 1 tsp olive oil

  • 1/2 tsp salt (optional)

  • 1/2 tsp paprika

  • 1/4 tsp cayenne pepper (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add onion and garlic; sauté until soft.

  • Add carrots, celery, and bell pepper; cook for 5 minutes.

  • Stir in chopped cabbage, zucchini, and diced tomatoes.

  • Pour in vegetable broth and add spices.
